Day 146: MIA

I have been sadly MIA lately. I know this. Primarily, this is due to a dietary change I've been working through since April. Mostly, it was cutting out land animals, which has turned into veganizing 90% of my diet with the goal of not having to qualify that with a percentage this year.

I won't go into why here. It's nobody's business but my own. All I will say is it feels right for me.

So here forth, the recipes I post will be at the very least vegetarian... and more than likely will be recipes I've adapted to be so.

We could all do with more veggies, folks.

Day 17: Zucchini Fries

I will DEFINITELY make these more often. My Guy got seconds and Teen Girl ate the heck out of them. The only person it didn't impress was Teen Boy, but if it passed the 16 year old vegetable hater daughter test... it's a win!




Also, I served this with ranch dressing instead of ketchup or whatever the original pic shows. Very tasty, but I'm sure there's a healthier choice out there.

Day 13: Crispy Baked Parmesan Green Beans

Mine came out nowhere as cute. Maybe it's because I didn't have a cute cup and parchment paper? More likely its because my seasonings didn't stick to my beans the way the pic's did. Which means they were pretty bland. Which means... no one's going to ask for these again. Flicking out of my recipe book. Hope you like them better than we did!

Day 12: Frosty Protein Shake

This one's going to be short and sweet. No need for a picture (and honestly, there was no time). But mine looked pretty similar to this, just a bit darker. Maybe I used more cocoa powder. Regardless, the thickness comes from an ingredient called xanthan gum, which I certainly didn't have in the house.


But since a lot of upcoming recipes call for this anyway, I decided to hunt it down. It wasn't hard. I found it at a local health food store. They have it in jars for about 10 bucks, or little packets (much like active dry yeast pouches) for about 60 cents each. I went that way. Also, because I felt victorious for just finding this stuff, I used only it and skipped the guar gum since it was merely a suggestion. 

Anyway, this tastes NOTHING like a frosty. It tastes just like a plain chocolate protein shake. The only thing I can guess is she named it after the texture. My Guy and Teen Boy liked it well enough, but the name led to expectations that I think, in turn, led to disappointment. I'm not sure I'll ever make it again, but at least now I know I can toss in some of that xanthan gum to give shakes a more ice cream texture!

Day 9 : Creamy Garlic Broccoli

Not so pretty, but certainly looks a lot creamier eh?
I think I added a little too much lemon, or else the hummus I used was way too potent, because I couldn't handle more than a couple of bites of this. My tastebuds couldn't handle it. The good news, if you have people in your house who don't like broccoli, try this. They won't even be able to taste it!
