Day 134: Spaghetti Squash Fritters

Original Source: Mommy Hates Cooking

First let me say, I love the name of the blog this recipe came from!!!

Okay, got that off my chest. Let's move on.

I've never eaten spaghetti squash, let alone attempted to cook it. I was a bit intimidated. What if mine didn't fall out like perfect little noodles the way the pictures insisted it would????

But guess what??? It did! So easy! And cute! And... okay I'll admit it, the family wasn't overly excited by the look or taste of these, but I was. So if you like veggies, you'll like these I hope. If you're not a veggie person, you might want to skip this one. But I for one really enjoyed the heck out of them and will be making them again.

Day 17: Zucchini Fries

Original Source: Our Best Bites

GET RECIPE HERE

I will DEFINITELY make these more often. My Guy got seconds and Teen Girl ate the heck out of them. The only person it didn't impress was Teen Boy, but if it passed the 16 year old vegetable hater daughter test... it's a win!

Also, I served this with ranch dressing instead of ketchup or whatever the original pic shows. Very tasty, but I'm sure there's a healthier choice out there.

Day 13: Crispy Baked Parmesan Green Beans

Original Source: Dashing Dish
GET RECIPE HERE

Mine came out nowhere as cute. Maybe it's because I didn't have a cute cup and parchment paper? More likely its because my seasonings didn't stick to my beans the way the pic's did. Which means they were pretty bland. Which means... no one's going to ask for these again. Flicking out of my recipe book. Hope you like them better than we did!

Day 9 : Creamy Garlic Broccoli

Original Source: EEZY recipes
FIND RECIPE HERE

Here's what mine looked like:

Not so pretty, but certainly looks a lot creamier eh?
I think I added a little too much lemon, or else the hummus I used was way too potent, because I couldn't handle more than a couple of bites of this. My tastebuds couldn't handle it. The good news, if you have people in your house who don't like broccoli, try this. They won't even be able to taste it!
