Day 20: Chicken Scarpariello

Okay, seriously, this might be a cheat because I tried it months ago, but since then, it's become a family favorite, requested several times per month...

My family prefers it with breasts rather than thighs, and occasionally I switch it up to make it healthier by using chickpea flour instead of white and soy-free Earth Balance instead of butter. I also will sometimes add a little extra broth when I want to serve it over pasta to give the noodles some flavor. It's amazing! The photos here, however, were made with thighs and served on orzo.
