How can you look at that picture and not want to dig in? I don't even like dressing on my salad much, but I had to try this one! Even knowing I'm the only one in my house who'll eat an avocado, still had to give it a go! Granted, mine wasn't half as bright and cheerful as the one above, but I think that's more about lighting!
I topped a spinach and arugula salad with it and YUM! Even My Guy and Teen Girl liked it! (It wouldn't have mattered. I would have kept the recipe anyway.) Teen Boy wasn't home and I honestly can't even guess whether he'd have taken more than one bite.
GET RECIPE HERE. (easily veganized by swapping mayo for Veganaise or other vegan mayo.)
