First let me say, this was yummy. It passed everyone's tastey test with a thumb'up up. What's not to love about potatoes, bacon and cheese?? However, it wasn't so amazing that one can forget the tediousness of preparing it. I'm not adverse to time in a kitchen. But that time isn't usually spent solely on preparing a potato side dish. It was more time consuming than the main dish and the dessert. Will I make it again? Sure, for special occasion. But not for a normal weekday meal when time is so valuable. By the way, that is not to say this recipe is difficult. It's quite simple, and if you have time on a Monday to fix it, go for it. I'd just rather spend that extra time baking cookies and roasting a chicken than dealing with potatoes.
