Day 130: Brown Bag Microwave Popcorn

Okay, when I went back to find the pin for this, the link didn't take me anywhere for popcorn, so I can't find the original source. But none of that matters, because this works!!!!

Put 1/4 cup of popcorn kernels in a brown paper bag. Fold closed and place folded side down in the microwave. Nuke for, I believe the instructions were 1.50 minutes. This was a bit too long for my microwave but since they all vary, you might have to keep trying different times to find your perfect kernel. That's it. Season as you like. No processed crap. No over salted or fake buttery taste. Only what you want on it :) (I recommend truffle oil and nutritional yeast!)




Like I said, 1 minute, 50 seconds was a bit too long for mine. Going to try 1.40 next time but otherwise, this is brilliant!!!

Day 103: Rotel Cups

 My apologies. I have no photos of my finished product. I made them for Thanksgiving, and was in the middle of chaos when I pulled them out of the oven. By the time I reached for my camera... these babies were virtually GONE. They might have even been the hit of the "snack table."

I don't even like tomatoes, but because the recipe called for Rotel and it's the only brand I can stomach, I went for it. And HOLY GOSH were they good! They're simple to make, quick to cook, and faster to disappear. Highly recommend you try this one, so GET THE RECIPE HERE.

Side note: I think these would be fantastic with a shrimp on top since they are bite sized!

Day 83: Clean Eating Cinnamon Chocolate Chip Protein Bars

My Teen Boy has become a gym rat, and since the rest of the family is health conscious 80-20, I like finding recipes like this where he can get a bulk of calories (Yes, these are NOT calorie light) but from good ingredients and not wrapped in chemical, prepackaged hell. I took a bite after I pulled them out of the oven and was really disappointed since the cost of ingredients wasn't cheap. However, the longer they sat, the better they became. By the next morning, My Guy was packing them for work and told me he ate them all day, so I guess they're a keeper after all. (He's thin, he can handle the calorie load.)

Day 46: Dried Strawberries

I thought these looked so pretty and flavorful, and a nice healthy snack. And I'm not saying they aren't. I'm simply saying that MINE were not. First of all, my oven does NOT go down to 100 degrees. The lowest temp I could set it was 175. So I checked them at 2 hours, still plump and juicy. Put them in for another hour. Still not dried out. One more hour, still gross so I tossed them. Didn't even make anyone else in the family try them.
