Day 140: Buttery Corn Casserole

No original source. I found it in a Side Dish cookbook about 5 years ago.

Breaking my own rules here. 1) I didn't get this recipe from Pinterest (but since I plan to put it on there, it will soon be in that webisphere.) and 2) this isn't a new recipe for me. I've been making it for years, usually at Thanksgiving or Christmas.

It's always a hit! You'd think with all the corn and broccoli it might be healthy, but I certainly wouldn't categorize it that way. It's full of butter and crackers and just everything yummy you can think of.

So, try it. Really. You won't be sorry!!!

What you need:
1 can cream corn
1 can whole corn
1 small package of broccoli
1 stick melted butter
1 box chicken-n-biscuit crackers, crushed

What to do:

1: cook broccoli until tender
2: Mix corn, cooked broccoli, 1/2 the melted butter, and 1/2 the crush crackers
3: Top with remaining crackers, then drizzle remaining butter over crackers.
4: Bake until golden at 350 for about 30 minutes.

Day 124: Biscuits and Gravy Casserole

Biscuits and gravy were a staple breakfast in my house when I was growing up. I never cared for sausage gravy, but when I found this recipe, I still had to try it, even though it's probably half a day's worth of calories! For my birthday breakfast, My Guy made this at my request and it was pretty good. The only fault in it, and my family agreed, was the egg mixture. It was a little bit gross, like uncooked scrambled eggs. If we make this again, I'm going to have to find a way to skip that part.

Regardless, the rest of it was great. We just picked that nasty stuff out.

Day 19: Creamy Chicken and Broccoli Casserole

First, let me say, I had mixed feelings about attempting this one. I, personally, LOVE a good casserole. But my family. . . eh, they're a little less than joyous whenever I attempt one. But this one had all the makings of something I had to try, and I don't mind making them suffer a little whenever possible, so I gave it a go!



NOTE: I cooked mine for about 20 minutes and added more cheese to the top to cook for the remaining 10. If you love cheese like I do, I highly recommend this. You could also top with crushed Ritz crackers and drizzle with butter if you'd like to try a variation on topping!


Serve over rice! (My daughter hates rice, so she skipped this part. Her meal looked a little more soupy than the rest of ours, but... well, I'll tell you in a minute how she felt about that.)I forgot to take a picture of the final result :( Just trust me. It looked FAB!


THE RESULTS:
LOVE LOVE LOVE LOVE LOVE!
My non-casserole enthusiast family even loved it! Even my daughter whose meal was a little soupier than ours. It's going in the favorites file and I can guarantee it's going in my Potluck file too!


Side note: I'm thinking this might be an amazing topper for Baked Potatoes when looking for something to do with the leftovers! Or even for night one.
