Day 137: Hash Brown Egg in a Hole

Since the original recipe's photo has all the instructions on it, and I don't want to step on any copyright toes, I'm only posting mine here with a link to the original.

In our house, these are usually made with bread rather than potatoes, and we call them "popeyes" for reasons I can't quite remember but were passed on to me from my mother. My daughter loves them. I love them, when I'm eating eggs. So when I saw this version of using hashbrowns instead of bread, I had to try it. For Mother's Day, My Guy made these for me for breakfast. They were decent, and I'm unsure if it was the brand of hashbrowns used that tasted greasy to me, but that said -- and I DID appreciate them simply because My Guy made them for me -- I much prefer the bread version. Far less heavy!!!

Day 91: Soft Scrambled Eggs with Ricotta

I'm not a fan of ricotta. I won't even order lasagna at restaurants because of it. So what compelled me to try this recipe?

It just looked yummy. And I don't mind stepping out of my comfort zone on occasion. So I made this for 3 people (Teen Girl wasn't home), served it on whole wheat toast and a side of bacon. It was pretty good. Not sure I'll ever crave it again, but I won't toss the recipe. Also, mine were chiveless. I simply didn't have any and it was too early for a trip to the store.

Teen Boy took one bite. Don't think he was a fan. My Guy ate his. Liked it, he said, but like me, he thought the texture was a bit odd. I think I'll try it next time with cottage cheese instead.

Day 56: Bacon and Egg Grilled Cheese

If you look at the picture above and you AREN'T instantly hungry, I don't want to know you. Fried egg??? Bacon??? Cheese???? Gimmmmmeeeee now!

So, we ate this this weekend and the verdict? Keeper. It tasted very much like one of my favorites, Egg in a Basket with bacon. However, ours were pathetically slim compared to the picture so I cant help but wonder if something in that sandwich is double stacked. Regardless, try it. It's easy and the whole family loved it. (Both teens, however, requested theirs without cheese.)

Day 18: Bacon Egg Cups

As I said before, My Guy takes care of weekend breakfasts around here, and this is no exception.

Each cup is about 100 calories so I'm taking it upon myself to categorize it as healthy too! (Only because of the high protein, low cal!)




The verdict:
On the website, the author posted that readers had commented about partially cooking the bacon in advance. I'd recommend that. The only real downside to this recipe was that the bacon was a little chewy and "clear" in parts. A crunchier bite might make this one a total winner. For 100 calories a pop, I'm totally willing to try it again! Especially if he's the one cooking it!

Day 3 - Bacon, Egg and Cheese Biscuit Bowls

Cheating a little on this one. No pictures of our attempt because my guy is the breakfast man and, well, he didn't take any. But let me assure you, they were great! His looked a little more "bowly" than the picture above though, which to me looks more like a plate. Whatever. Didn't even need a fork. This one is a keeper! Next time, I'd like to try it with a fried egg instead of scrambled and maybe lose the cheese, just to try it.
